This summer, Cai Yue Hot Pot draws inspiration from the time-honoured art of Cantonese slow-simmered broth. Sea coconut, coconut flesh, honey dates, wolfberries, and chicken leg are gently coaxed over a low flame, yielding a golden, luminous broth that is at once clear, nourishing, and delicately sweet.
The soup’s gentle clarity carries the natural sweetness of sea coconut and the full-bodied warmth of chicken, and as it simmers at a slow, steady roll, it draws out the most tender and pristine flavours from each piece of fresh seafood within.
