From Cantonese cuisine and hot pot to Italian fare, each restaurant brings its own culinary language to the table, paired with Royal Salute 21 Year Old Signature Blend. Through tableside pouring rituals, curated food pairings, and the art of tasting, this collaboration reimagines the philosophy of modern luxury dining — inviting you into a midsummer celebration where cuisine, whisky, and refined living come together.

Guided by the philosophy of eating in harmony with the seasons, our chefs have selected the finest seafood, fruit, and seasonal ingredients of midsummer, paired with contemporary Cantonese craftsmanship to create an exclusive summer set menu.

The journey begins with a vibrant summer hors d’oeuvre platter featuring jute leaf and golden hydrangea dumplings, mango-scented scallops with fresh bamboo shoots, and Hua Diao wine-chilled duck tongue. The menu continues with double-boiled winter melon soup with conpoy, signature braised lobster, steamed grouper with French Bayonne ham, sea cucumber with abalone in jade sauce, and pan-seared A5 Shinshu wagyu cubes with truffle salt — concluding with abalone fried rice with egg white and a golden mango and pineapple nectar, presenting a refined and richly layered Cantonese dining experience.

Inspired by the tradition of Cantonese slow-simmered soups, our chefs slow-cook coconut palm, coconut flesh, red dates, goji berries, and chicken thigh for hours, yielding a golden, clear, and naturally sweet coconut chicken broth.
