This season’s selection features female Budai mud crab from the coast of Chiayi, each weighing approximately 600 grams, chosen for their substantial claws, plump body, and rich roe and fat.
Taiwanese tea is infused into the broth, allowing the sweetness of crab, the essence of the sea and the character of tea to unfold in layers with every dip. Paired with scallop, conpoy, bird’s nest, grass shrimp, fresh fish, freshwater eel, baby squid and seasonal vegetables, a single crab becomes the centerpiece of a feast where mountain and sea meet.
